The problem with Thanksgiving? What to do with all the leftovers!

In the days following Thanksgiving most people usually have lots of leftovers. Americans make turkey sandwiches, another turkey dinner then maybe some sort of caserole. Sometimes its tough to come up with ideas on what to do with all that leftover turkey. That’s why we asked our chef to create some Paleo turkey leftover recipes that we could share with you. 

1. Turkey Salad

img_9629One of the easiest things you can make with leftover turkey is turkey salad. This is a basic recipe, but really you can be creative and add whatever you want. How about some green onions, dried cranberries and toasted pecans? Have fun with it and make it your own. 2. Paleo Turkey Gumbo

img_9648As the weather gets colder a great use for leftover turkey is to make soups, turkey pot pie or stews. Our Executive Chef came up with this Paleo Turkey Gumbo. It uses the delicious Pederson’s No Sugar Kielbasa Smoked Sausage and has the traditional flavors you would expect from a gumbo. Check out the recipe here Paleo Turkey Gumbo  

3. Turkey Mole Tacos

img_9639 Chocolate and turkey, whaaat? Have you ever had mole? Moles come in various flavors and ingredients, with chili peppers as the common factor. However, the classic mole version is the variety called mole poblano, which is a dark red or brown sauce served over meat.
