Amazing Superfood Salad with Scottish Salmon (AIP)

Did you know that both salmon and blueberries are considered superfoods? Superfoods have an extremely dense concentration of vital nutrients, vitamins and/or minerals, as well as antioxidants, good fats, healthy enzymes, or other healthy properties that help to treat, lower the risk of or prevent specific diseases and maladies. Sounds like good foods to eat to me! This is another tasty salad for you to try!

Amazing Superfood Salad with Scottish Salmon (AIP)

  1. 24 oz Scottish Salmon Filet, skin on, cut into four 6 oz portions
  2. ½ tsp. sea salt
  3. 1 T. olive oil
  1. 16 oz baby kale
  2. 8 oz baby arugula
  3. 8 oz fresh blueberries
  4. 1 ripe avocado, cut into quarters and sliced
  5. 1 small red onion, thinly sliced
Balsamic Reduction
  1. 8 oz balsamic vinegar
  2. 8 oz raw natural honey
For the Balsamic Reduction
  1. In a small sauté pan, heat balsamic and honey until simmering. Turn to very low setting and reduce by half until the mixture is syrupy.
For the Salmon
  1. Heat an oven safe sauté or grill pan until very hot, or heat a gas barbecue grill until very hot. Brush the salmon pieces with the olive oil and sprinkle with the sea salt.
  2. Grill the salmon face side down, once it is about ¼ of the way cooked through, turn the fish and grill it on the skin side.
  3. Cook the fish until almost cooked through, still a little medium rare in the center.
  4. Remove it to a platter to rest while you make the salad.
  5. The carry over cooking will finish the inside of the salmon to perfection.
Building the Salad
  1. In a large bowl toss the kale, arugula, red onion slices and blueberries.
  2. Distribute evenly amongst 4 large plates.
  3. Top with the sliced avocado, one quarter per salad.
  4. Drizzle the balsamic syrup over each salad.
  5. Top with the grilled salmon and serve.
