ranch coleslawIt’s no secret that we love simple-to-prepare meals that really hit the spot with a punch of flavor and keep us fueled for hours.  That’s why we were so inspired when we found Paleo Leap’s Chicken with Buffalo Ranch Coleslaw…wow.  We literally saw the recipe and whipped it up ourselves the same night!

The only real difference with our version is that we had red cabbage on hand and said what the heck and tried using it instead of green cabbage.  We loved it just the same!  We used our food processor with the grater attachment to finely shred ours and we added an extra carrot or two because we’re greedy!  We also LOVE lots and lots of sauce so we probably doubled or tripled the amount of sauce the recipe called for.  It was just so delicious and as is true for coleslaw, it just got better the next day.  The flavor of the buffalo ranch sauce was perfect, not too spicy that you couldn’t enjoy it but you could also customize it to your taste preference and add more heat if you’d like.  This is definitely a recipe we will be going back to again and again! 



1 head green cabbage, finely shredded
1 large carrot, finely shredded
4 boneless, skinless chicken breasts, butterflied and lightly pounded
1 tbsp smoked paprika
1/2 tbsp garlic powder
Sea salt and freshly ground black pepper

Ingredients for the buffalo ranch sauce:
1/4 cup homemade mayonnaise
1/4 cup coconut milk
1 tsp raw garlic, minced
2 tsp fresh dill, minced
2 tsp fresh chives, minced
1/2 tsp paprika
2 tbsp apple cider vinegar
2 tbsp hot cayenne pepper sauce
Sea salt and freshly ground black pepper
