Company Collaboration Leads to Amazing Chicken Dish
We got together with Bubba’s Fine Foods and created this great chicken dish using their Honey Chipotle UnGranola. Our Executive Chef ground the Bubba’s UnGranola in a food processor to create a delicious crust on the chicken. She also changed the traditional way you would bread chicken. Instead of the flour and egg wash that you would normally do for a dish like this, the chicken was coated in honey mustard then pressed into the Honey Chipotle UnGranola crumbs before sautéing. Yes, it was definitely delicious!
- 1 package Bubba’s Chipotle Honey UnGranola
- 1lb. Chicken Breast
- 2 T. honey
- 2 T. Dijon Mustard
- Mix honey and mustard together in a small bowl. Butterfly and pound out chicken breasts to even thickness. Process granola to larger crumbs and pour out onto a plate. Brush each chicken breast with honey mustard mixture and press into crumb mixture to adhere.
- In a large nonstick skillet, add some coconut oil and when it’s hot lay the chicken breasts granola side down in pan and cook until golden turning once. Remove to platter.
