Paleo on the Go’s kid-approved Coconut Crusted Chicken Fingers are perfect for those nights when parents don’t have a lot of time to cook but need something healthy their children will eat.  This recipe takes less than 15 minutes and can be simplified even further by substituting an olive oil cooking spray.  Chicken fingers pair really well with our PINEAPPLE SALSA.  Use it as a dip!

Coconut Crusted Chicken Recipe

  1. 1 lb. chicken breast, cut into thin strips
  2. 2 cups coconut flour
  3. 1 tsp. salt
  4. 1 tsp. garlic powder
  5. 1 tsp. onion powder
  6. 1/2 cup coconut oil
  1. Mix together coconut flour, salt, garlic powder and onion powder.
  2. Coat chicken in flour mixture.
  3. Heat oil in a deep sauté pan.
  4. Fry until golden on both sides in coconut oil.
  5. Allow to drain and cool slightly on paper towels.
  6. Enjoy!
