Crunchy fried chicken takes me to my happy place

Coconut Hemp Pumpkin Seed Crusted Chicken Tenders

  1. 1 bag Navitas Naturals Coconut Hemp Pumpkin Seeds
  2. ½ lb chicken breast
  3. 2 eggs
  4. 1 cup Cassava Flour
  5. Avocado Oil for frying
  6. Honey Mustard dip;
  7. ½ cup honey
  8. ½ cup Dijon mustard
  9. 1 T. coconut vinegar
  1. Cut chicken into strips.
  2. Whisk eggs in a bowl.
  3. Process pumpkin seeds until a fine breadcrumb like texture is achieved.
  4. Pour ground seeds out onto a plate.
  5. Pour flour out onto another plate.
  6. Dredge each chicken strip into flour, then dip in egg and press into crumb mixture.
  7. Once they are all coated, pour some avocado or olive oil into a non stick pan and heat up.
  8. Fry chicken strips until golden brown and cooked all the way through.
  9. Serve with any condiment you prefer.
