Crustless Quiche

Delicious crustless quiches that can be whipped up in advance and served for breakfast or anytime.

  1. 6 eggs
  2. 4 tbsp. bacon, cooked, chopped finely, reserve fat (we recommend PEDERSON FARM'S SUGAR-FREE BACON)
  3. 6 tbsp. cooked baby spinach
  4. 4 tbsp. sautéed, diced onion
  1. Beat eggs.
  2. Grease a nonstick muffin pan with bacon fat.
  3. Place bacon, onion and spinach in a cup then pour eggs over.
  4. Bake 15-20 minutes at 350 degrees until the eggs are puffed and cooked through.
