PALEO ON THE GO knows that many followers of the paleo diet miss certain foods after adapting to the paleo lifestyle.  However, we’re here to make sure you don’t feel like you’re missing out on anything.  That’s why our kitchen crew has developed a paleo eggplant pizza!   We’ve taken pizza and made it using REAL FOOD.  Serve this up at your next party or when the kids ask for pizza night.  It will definitely be a big hit!

DIY Paleo Eggplant Pizza
Fill your craving for Friday night pizza with this delicious eggplant crust pizza recipe. Enjoy the flavors of pizza made with real food and without the bloat.

  1. 1 eggplant, not peeled, cut into 1/2" thick rounds
  2. 1 cup almond flower
  3. 2 cage free eggs, beaten
  4. 1/2 cup fresh basil, sliced thinly
  5. 2 cups marinara sauce
  6. 1 cup raw cashew nuts, soaked
  7. Olive Oil in spray bottle
(Cashew Cheese)
  1. In a food processor, process soaked nuts with a pinch of salt and garlic until smooth like ricotta.
  1. Dip eggplant in the egg, then dredge in almond flour.
  2. Place on baking sheet and spray with olive oil.
  3. Then bake at 375 degrees until golden.
  4. Top each eggplant round with 2 tbsp. if marinara and sprinkle on basil.
  5. Sprinkle cashew cheese on each eggplant round.
  6. Return to oven for five minutes to heat the toppings.
  7. Remove from oven and enjoy!
