DIY Paleo Biscuits and Gravy Recipe
Our paleo biscuits and gravy are a great breakfast alternative and they are packed full of nutrient dense ingredients.

Biscuits
  1. 12 egg whites
  2. 1 1/2 cup blanched almond flour (8 ounces)
  3. 1/2 cup coconut flour
  4. 2 teaspoon baking powder
  5. 1/2 teaspoon salt
  6. 3 tablespoons coconut oil (or ghee), chilled
Gravy
  1. 1 lb breakfast sausage **
  2. 1 T fresh sage
  3. 2 tsp fresh thyme
  4. 1/4 tsp mace
  5. 1/2 tsp ground ginger
  6. 1 can coconut milk
  7. 1 T arrowroot powder
  8. 1/4 cup chicken stock
  9. sea salt and pepper to taste
  10. coconut oil
Biscuits
  1. Preheat oven to 400 degrees. Line a baking sheet with parchment paper. Mix almond flour, coconut flour, baking powder and salt together in a large mixing bowl. Cut in cold coconut oil with a fork until the mixture is crumbly. Place the bowl in the refrigerator for 10 minutes. In a medium bowl whisk egg whites until they are very frothy. Fold the egg whites into the chilled flour mixture until well combined. Scoop about 1/4 cup of dough onto the baking sheet and smooth the top to form each biscuits, an ice cream scoop works well in this step. Bake for 15-18 minutes, or until the tops are golden brown. Serve warm or store in an airtight container in the refrigerator.
Gravy
  1. Heat coconut oil in a skillet. Brown the sausage.Remove and let drain on a paper towel. Without cleaning the pan, add coconut milk. Heat and whisk in chicken stock and all the spices. The arrowroot powder will thicken the gravy. Add more if necessary or simply reduce the gravy until desired consistency. Taste for seasoning. Add salt as needed. Add sausage back into gravy. Pour over two biscuits and serve.
Notes
  1. **Breakfast Sausage: we make our own breakfast sausage spice blend to avoid any added sugar. You can make up a bunch and then freeze whatever you don't use.
  2. **5 lbs ground pork
  3. 1 Tbsp salt
  4. 1 Tbsp sage
  5. ½ tsp ground ginger
  6. 1 ½ tsp mace
  7. 1 ½ tsp dried thyme
  8. When I made these at home, I added a ton more sausage to my gravy!
