  2. 1 - 14oz can organic coconut milk
  3. 1 - tsp vanilla extract
  4. 2 - tsp maple syrup (more or less to taste)
Instructions
  1. Day before, freeze the can of coconut milk, this causes the cream to rise to the top. Several hours before making the whipped cream, thaw the coconut milk. Take all the cream that you can from the can and place it in a mixing bowl. Add the vanilla and maple syrup. Using an electric beater beat to desired consistency, adding coconut water as needed. Refrigerate until serving time. Experiment with adding some cocoa powder, fresh berries, or top any favorite Paleo treat. Save the water and drink it later.

  3. 1/4 cup coconut milk (optional)
  4. 2 tsp real maple syrup
  5. 1 tsp natural vanilla extract

Chia seeds are so fun! Add any liquid to them and they expand and gel. This makes them perfect for making dairy-free puddings.

  1. 2 cups unsweetened coconut milk
  2. 1/3 cup chia seeds
  3. 1/4 cup maple syrup (or less to taste)
  4. 1/4 teaspoon cinnamon
  5. pinch of sea salt to taste
  6. coconut flakes and berries for garnish
Instructions
  1. In a small bowl or large jar, stir together the coconut milk, chia seeds, maple syrup and cinnamon. Chill in the refrigerator for at least 4 hours or until the chia seeds puff and expand.
  2. Pudding may be stored in an airtight container in the refrigerator for up to 3 days.
  3. Before serving, stir once and spoon into serving dishes. Garnish with coconut flakes and berries and serve immediately.
