Who doesn’t love chicken salad? It’s a simple, versatile dish that can be served on its own or on the side. It goes perfect with Chef Ann’s paleo flatbread (recipe found: here) This is a fairly basic (but, incredibly tasty) recipe, so feel free to experiment. - 1lb diced cooked chicken meat
- ½ cup paleo mayonnaise
- ½ cup finely diced celery
- ½ cup finely diced onion
- Sea salt and pepper to taste
- Mix first four ingredients together. Season with salt and pepper to taste.
