Egg salad is one of those comfort food items that almost everyone loves. Many of us have family recipes passed down from our grandmothers. We have a classic recipe that we dressed up with Pederson’s Natural Farms Sugar Free Bacon. Additionally, we’ve put it all on our Yiddish Kitchen Everything Bagels. Everything Bagel with Egg Salad and Bacon

Paleo Egg Salad Bagel

Egg Salad
  1. 2 eggs
  2. 2 T. minced onion
  3. 2 T. minced celery
  4. 3 slices Pederson’s Bacon
  5. 3 T. Paleo mayo (recipe below)
  6. 1 Everything Bagel
  7. ¼ tsp salt
  8. ¼ tsp pepper
Paleo Mayonnaise
  1. 1 whole egg
  2. 1 cup lightly flavored olive oil or avocado oil
  3. Juice of half a lemon
  4. Pinch of salt
  1. Fry the bacon in a saute pan until fully cooked.
For the Egg Salad
  1. Put eggs in a saucepan and cover with water. Bring to a simmer. Simmer for one minute, then cover pot and set aside for 8-10 minutes. The residual heat will finish the cooking process. Rinse eggs under cool water and then peel.
  2. Finely chop the eggs, add onion, celery, mayonnaise, salt and pepper.
For the Mayonnaise
  1. Place all ingredients into a jar and submerge an immersion blender to the bottom. Turn it on high and it will form the mayonnaise.
Build it
  1. Split an Everything Bagel lengthwise and toast lightly in a toaster oven or under a broiler.
  2. Spoon the egg salad over the bottom half
  3. Lay the bacon slices over that and then put the bagel top on.
