Cauliflower is one of my favorite vegetables and I am continually surprised at its versatility.
All four of these recipes are really good and show the versatility of Cauliflower Rice. Prep a big batch of the basic recipe to keep on hand. Then when you area craving a delicious savory rice dish you can whip out the Cauliflower Rice that you have prepped and give one of these recipes a try!
- 1 Head Cauliflower
- 1 Carrot
- 1 Onion
- 1 T. Minced garlic
- 2 T. Olive oil
- 1 t. Sea salt
- Cut Cauliflower into florets and put in bowl of food processor, pulsing until rice sized pieces are formed.
- Put into bowl and process onion and carrot until finely minced.
- In large sauté pan, pour 2T. olive oil, then add onion, garlic, and carrot, and sauté for 2-3 minutes until just done.
- Season with a little salt and set aside.
