The Best Breakfast Side Dish

Home fries are one of America’s favorite breakfast side dishes. Just the sight of them conjures up thoughts of diners, early mornings, and steaming coffee. If we used conventional, orange sweet potatoes for this recipe, they just wouldn’t look quite right. That’s why we used the Japanese white sweet potato. They look (and taste) very similar to the home fries most of us grew up eating.

By the way, the pork fat isn’t just an afterthought here; we think it knocks this dish out of the park. Try it out and see for yourself. Pair it with some eggs and Pederson’s Natural Farms Sugar-Free Bacon for the perfect breakfast! It goes great with our recipe for The Best Paleo Ketchup, as well.
