The Best Breakfast Side Dish
Home fries are one of America’s favorite breakfast side dishes. Just the sight of them conjures up thoughts of diners, early mornings, and steaming coffee. If we used conventional, orange sweet potatoes for this recipe, they just wouldn’t look quite right. That’s why we used the Japanese white sweet potato. They look (and taste) very similar to the home fries most of us grew up eating.

- 2 white sweet potatoes
- 1 onion finely chopped
- ¼ cup pork fat or lard
- Sea salt
- Peel potatoes and boil in small pot until just cooked. Allow to cool and chop into cubes.
- Heat pork fat in a saute pan, sweat onions for a minute or two then add potatoes. Saute potatoes, turning gently to lightly brown both potatoes and onions. Sprinkle with salt and pepper to taste.
