Traditional Korean Flavors Paleo Style

We’re excited to get International with our Paleo recipes! It’s been pretty exciting exploring different foods from around the world. Our Chef has taken a traditional Korean Bibimbap and recreated it for the Paleo purist. We love the versatility of cauliflower as mashed “potatoes” and here as “rice.” Maybe it’s a texture thing, but who misses real rice when you can have nutrient dense cauliflower rice prepared as delicious as this recipe. Be sure to give it a try! 

Korean Bibimbap

Ingredients
  1. 3 cups Cauliflower Rice
  2. 1 julienned carrot
  3. 1 julienned Zucchini
  4. 1 cup sliced Mushrooms
  5. 2 cups baby Spinach
  6. 4 T. olive oil
Quick Kim Chee
  1. ½ white Cabbage, cut into thin strips
  2. 2 T. scallions, sliced
  3. 2 T. sea salt
  4. 2 T. hot pepper flakes
  5. ½ cup white vinegar
  6. 2 t. honey
  7. 2 T. minced garlic
  8. 2 eggs
  9. 1 T. ghee
  10. 2 T. Coconut aminos
Instructions
  1. In a large bowl, put cabbage, scallions, sea salt, hot pepper flakes, vinegar, honey and garlic.
  2. Allow mixture to marinate for a few hours before preparing rice bowl.
  3. In large saute pan, add 1 tablespoon of olive oil, then add carrots, saute for a minute, remove and set aside, add one more tablespoon of olive oil to pan, add zucchini, saute for a minute, then remove, add another tablespoon of olive oil and add mushrooms, saute for a minute, then set aside, then place one last tablespoon of oil into your pot and saute spinach for a minute or two until just done, set aside.
  4. In a nonstick skillet, place 1 T. ghee, heat over medium heat and crack an egg into the pan and fry sunny side up until done, repeat the process with the second egg.
  5. Put a few scoops of riced cauliflower into each bowl, arrange the veggies neatly over the top, then garnish with the kim chee, drizzling coconut aminos over the top then carefully using a spatula transfer the eggs to the top of each bowl.
  6. Garnish with a few sliced scallions.
