The traditional version of this Irish pub recipe includes Guinness. Unfortunately, beer contains gluten. That doesn’t mean we had to sacrifice any authentic flavor, though! Take a trip to Dublin with this hearty paleo beef stew.

No-Guinness Beef Stew

  1. 1/4 C pork lard
  2. 5 lb chuck roast, cut into 1 inch cubes
  3. 5 medium onions sliced
  4. 2 T honey
  5. 1 cup coffee brewed very strong
  6. 1 T. raw cacao powder
  7. arrowroot powder
  8. 5 large carrots, sliced into chunks about 1 inch
  9. 5 sweet potatoes, cut into 1 inch chunks (optional)
  10. 8 oz portabello mushrooms, quartered
  11. 1 bunch celery, sliced into 1 inch chunks
  12. 4 cups Beef bone broth
  13. 1 cup cooking sherry
  14. 3 T tomato paste
  15. salt and pepper to taste
  1. Melt lard in large stock pot or dutch oven over high heat
  2. Brown meat on all sides
  3. Transfer browned meat to plate
  4. Add onions, carrots and celery to pot
  5. Stir over high heat until they begin to soften, about 10 minutes
  6. Add bone broth, coffee, honey, cacao powder, sherry and tomato paste and return to boil
  7. Return meat with accumulated juices to pot along with mushrooms, add some salt and pepper.
  8. Let it come to a boil, then cover and reduce heat to low
  9. Cook at least 2 hours until meat is tender.
  10. Add sweet potatoes to pot during last half hour of cooking.
  11. Thicken with diluted arrowroot to thicken if needed.
