Paleo BBQ Brisket

Tender grass fed beef brisket, slow roasted to perfection and topped with our homemade BBQ sauce.

Ingredients
  1. 1 3-4lb grass fed brisket, trimmed
  2. 1T chili powder
  3. 1 T garlic powder
  4. 1 tsp onion powder
  5. 1 tsp ground black pepper
  6. 1 tsp dry mustard
  7. 1 bay leaf, crushed
  8. beef stock
Instructions
  1. Preheat the oven to 350 degrees F.
  2. Make a dry rub by combining chili powder, salt, garlic and onion powders, black pepper, dry mustard, and bay leaf.
  3. Season the raw brisket on both sides with the rub.
  4. Place in a roasting pan and roast, uncovered, for 1 hour.
  5. Add beef stock and enough water to yield about 1/2 inch of liquid in the roasting pan.
  6. Lower oven to 300 degrees F, cover pan tightly and continue cooking for 3 hours, or until fork-tender.
  7. Trim the fat and slice meat thinly across the grain.
  8. Top with juice from the pan.

Paleo BBQ Sauce
Paleo ready bbq sauce that is out of this world. Tomatoes, lime, chipotle, garlic and shallots are slow cooked until nice and thick. Use it to top your favorite dish.

Ingredients
  1. 1 ¼ cup bone broth or au jus from braising your brisket.
  2. 6 oz can tomato paste
  3. 1 cup pureed tomato
  4. 1 Tbsp. Coconut Oil
  5. 1 tsp. Cumin
  6. 2 tsp. Dijon Mustard
  7. 3 cloves of garlic, chopped
  8. 1 tsp. Smoked Paprika
  9. 1/2 tsp. Chipotle Powder
  10. 1/2 tsp. salt
  11. 3 cloves garlic, minced
  12. 1 shallot, minced
  13. juice of 1 lime
Instructions
  1. Sauté shallots and garlic in coconut oil until soft.
  2. Add the rest of the ingredients to the pot and whisk together.
  3. Let simmer 20 min. Taste for seasoning.
  4. Add more broth as needed to get desired consistency.
