Cauliflower “rice” is one of those things you MUST learn how to make if you’re living the Paleo/Primal/Real Food lifestyle. It’s easy, versatile, and a sneaky way to get more nutrients into your meals. The cauliflower is a member of the cruciferous family. Those guys are chocked full of vitamin K, vitamin A, vitamin C, folic acid, and tons of other minerals and vitamins. 

Paleo Cauliflower Rice

This is Primal Nutrition by Karen’s take on this ubiquitous, paleo side dish. 
There are many ways to make cauliflower “rice.” This is mine. I grate the raw cauliflower and then use it in different ways.
