Scones are one of life’s little treasures. Chef Marc Roark, Paleo on the Go’s COO, has created a delicious scone recipe that is not only healthy but delicious. His scone recipe replaces conventional flour with a nutritious blend of almond flour and flax seeds and combined them with a variety of natural ingredients such as lemon zest, cinnamon, honey and sea salt. This is definitely going to become one of your anytime favorites.

Cinnamon Raisin Scones

Ingredients
  1. 1 3/4 cup blanched almond flour
  2. 3 tbsp. milled flax seed
  3. 1 tsp cinnamon
  4. 1/4 tsp sea salt
  5. 1/4 tsp baking soda
  6. 1/2 tsp fresh lemon zest
  7. 1/4 cup almond milk
  8. 1/4 cup organic honey
  9. 1 egg, beaten
  10. 3/4 cup raisins
Instructions
  1. Start by sifting into a large bowl the almond flour, flax seed, cinnamon and baking soda.
  2. Add sea salt, lemon zest and mix together.
  3. Add in the beaten egg, almond milk and organic honey, mix everything together and at the end fold in the raisins.
  4. Pour batter onto a sheet pan a few inches apart.
  5. Bake in a 350 degree pre-heated oven for 18-20 minutes.
