This restaurant style appetizer utilizes Paleo on the Go’s Paleo Tortillas and Straight From The Farm Cheddar “Cheese”. Nachos are some of the yummiest finger foods around, so we thought it’d be awesome to have a grain-free, dairy-free version available to make. The recipe is pretty simple with the help of our ingredients and is perfect for entertaining or a as a movie snack. Enjoy!

Paleo and Grain-Free Nachos Grande

Ingredients
  1. 6 paleo tortillas cut into triangle wedges (See above for link to recipe)
  2. Olive oil in spray bottle
  3. ½ cup coconut cream, cold
  4. ½ cup chopped cilantro
  5. 4 tomatoes, seeded and finely diced
  6. 1 jalapeno minced
  7. 3 T. minced onion
  8. Juice of two limes
  9. 2 avocados
  10. Sea salt
  11. ½ lb straight from the farm cheddar or smoky southwest, grated
Instructions
  1. Lay out tortilla triangles on sheet tray, spray with olive oil and place in 375 oven to toast lightly. When crisp, remove and sprinkle with sea salt.
  2. Mix tomatoes, jalapeños, cilantro, onion and lime juice from one lime to make a pico de gallo.
  3. Peel and mash avocados, adding lime juice from one lime, salt and a little tomato and onion.
  4. Sprinkle cheese over toasted tortilla chips and return to oven to melt cheese. Remove and lay chips on platter. Distribute guacamole, salsa, and coconut sour cream over the chips evenly. Sprinkle with a little chopped cilantro or scallions.
