Never heard of this dish? That might be because it’s not too common here on the mainland. While working in Hawaii, Executive Chef Ann picked up this special recipe. She liked it so much, she wanted to share a paleo version with everyone!
Hawaiian Loco Moco

Ingredients
- 12 oz ground beef
- 2 onions, sliced
- Salt, pepper
- 2 pints bone broth
- 4 T. arrowroot powder
- ½ head cauliflower
- 2 T. minced onion
- 2 T. minced garlic
- 2 T. coconut aminos
- 3 T. sliced scallions
- Salt, pepper
- Tallow
- 4 eggs
- 2 scallions sliced
Instructions
- In processor, mince cauliflower into rice sized pieces. Melt tallow in large pan, saute onion and garlic for a minute then add cauliflower rice, stir to combine, add a few tablespoons of coconut aminos to steam it, stir in scallions, season with salt and pepper, remove from heat and keep warm.
- Season ground beef with 1 t. salt and 1 t. pepper and form into two patties. In saute pan fry patties on both sides until cooked to your liking. Remove and keep warm. In same pan add more tallow and saute onions until golden brown. Add bone broth and bring to simmer. Reduce by half and thicken with arrowroot to gravy consistency. Season with salt and pepper if needed.
- In nonstick pan, melt some bacon fat, fry eggs to your liking.
- To plate, lay out half of the cauliflower rice on each plate, place hamburger patty over the rice, spoon onion gravy over the patty and then top with two fried eggs. Sprinkle with sliced scallions.
