- 1 cup extra light tasting olive oil, macadamia or avocado oil
- 1 whole egg
- 1 pinch sea salt
- 3 tsp fresh lemon juice or vinegar
- Put egg into a wide-mouthed jar, add salt and lemon juice. Pour oil over the top. Insert stick blender to bottom of jar and blend for 2 minutes until a thick mayonnaise forms.
