“Mug Muffins” are great for breakfast! They’re quick, easy, tasty and provide the perfect energy boost to start your day. Pumpkin Mug Muffin

Ingredients
  1. 1/2 banana
  2. 1 egg
  3. 1/2T coconut oil
  4. 2T coconut flour
  5. 3T pumpkin
  6. 1t baking powder
  7. 1/2t cinnamon
  8. 1/2T maple syrup
Instructions
  1. Put banana in a mug and melt in microwave 1 min. Whip in egg, coconut oil, coconut flour, pumpkin, baking powder, cinnamon, dash salt. Then stir in some raisins (and/or nuts, chocolate chips) and optional 1/2T maple syrup but its sweet enough with raisins. Microwave about 2.5 min until the top looks cooked.

Strawberry Vanilla Mug Muffin

Ingredients
  1. 1 Tbl coconut oil
  2. 1 Tbl applesauce
  3. 1 large egg
  4. 1 tsp vanilla extract
  5. 1T coconut sugar or chocolate chips
  6. 1/4 cup @ottos_cassava_flour
  7. 1 tsp baking powder
  8. 1 tsp cinnamon
  9. 1/4 cup diced strawberries
Instructions
  1. In a bowl combine all ingredients except strawberries. Stir just until mixed well. Then add 1/4c diced strawberries. Pour into greased mug and microwave about 1 1/2 minutes or until top looks set. Eat warm or let cool. Enjoy!
