Saturday Morning Treat – Pancakes!
One of my favorite things to do on the weekend is have a nice breakfast. One where I can relax and enjoy the meal instead of the normal rushing on weekday mornings. And pancakes are a treat that I like to enjoy from time to time. This is a very simple recipe;
- 1 medium banana
- 1 egg
- 1/2 cup almond flour
- dash of cinnamon (as desired)
- 1 tsp of vanilla extract
- Add 1-2 tbsp of coconut oil to a pan
- Divide the batter in two pancakes and cook
- Double or Triple each number based on how many people you're serving (or for leftovers).
Serve with your favorite side of greens or all by itself! or serve with a side of Pederson’s Natural Farms Sugar Free Bacon, because you can never have enough bacon. Or order some of our Chicken Breakfast Sausage to keep on-hand for one of your relaxing weekend breakfast, great with pancakes!
