Saturday Morning Treat – Pancakes!

One of my favorite things to do on the weekend is have a nice breakfast. One where I can relax and enjoy the meal instead of the normal rushing on weekday mornings. And pancakes are a treat that I like to enjoy from time to time. This is a very simple recipe;

Paleo Pancakes

  1. 1 medium banana
  2. 1 egg
  3. 1/2 cup almond flour
  4. dash of cinnamon (as desired)
  5. 1 tsp of vanilla extract
  6. blueberries.
  1. Add 1-2 tbsp of coconut oil to a pan
  2. Divide the batter in two pancakes and cook
  3. Double or Triple each number based on how many people you're serving (or for leftovers).

Serve with your favorite side of greens or all by itself!  or serve with a side of Pederson’s Natural Farms Sugar Free Bacon, because you can never have enough bacon. Or order some of our Chicken Breakfast Sausage to keep on-hand for one of your relaxing weekend breakfast, great with pancakes!
