Sausage and Cabbage Noodles
Italian sausage, cabbage and red are sauteed with the flavors of caraway, fennel and paprika in this sausage and cabbage noodle recipe.

  1. bulk Italian sausage - 1 pound
  2. red onion - 1, thinly sliced
  3. green cabbage (or bagged cabbage slaw) - 1/2 head or 5 cups
  4. fat of choice: grassfed butter, ghee, coconut oil, lard, etc. - 1-2 Tbsp
  5. caraway seed - 1/2 tsp
  6. paprika (leave out for AIP) - 1/2 tsp
  7. fennel seed, crushed - 1/2 tsp
  8. freshly ground black pepper - to taste
  9. sea salt - to taste
  1. In a large skillet, crumble the sausage and brown over medium-high heat.
  2. Once the sausage is fully cooked, transfer it to a plate or bowl and set aside.
  3. Add the fat to the same pan with the sausage drippings. Add onions and cook for about 5 minutes or until the onions just start to brown.
  4. Add the cabbage and cook for another 7-10 minutes or until the cabbage is tender and noodle-like.
  5. Transfer the sausage back to the pan, add the spices, and toss gently to combine.
  6. Divide evenly among plates and serve with Fried Apples.
