Everyone Loves Tacos

Growing up in Southern California with its plentiful taco stands and trucks, I learned early to appreciate the almighty taco. Tacos were a staple and Fridays were always taco night in our house.

A New Kind of Taco For the Paleo Diet

However, we never had tacos like these Stuffed Sweet Potato Breakfast Tacos. While following a paleo diet and not eating corn I do miss nice crispy corn tortilla shells. But, filling a baked sweet potato with the taco meat, sautéed onions and guacamole makes such an amazing, filling meal it is easier to go without the traditional taco shell while satisfying that taco craving! These Stuffed Sweet Potato Breakfast Tacos are heaped with guacamole, YUM! In my opinion, Haas Avocados are the best for guacamole but, you can use whatever variety is available where you live. Definitely give this recipe a try.

AIP Stuffed Sweet Potato Breakfast Tacos

For The Meat
  1. 2 tblsp olive oil
  2. 1 lb ground beef
  3. 3 tblsp oregeno
  4. 1 tsp salt
  5. 1 tblsp onion powder
  6. 1 tblsp garlic powder
For the Guacamole
  1. 2 avocados, ripe
  2. 3 tblsp fresh chopped cilantro
  3. 3 tblsp coconut cream
  4. 1 lime, juiced
  5. 1 tsp salt
Sauteéd Onions
  1. 1 onion sliced
  2. 3 tblsp olive oil
Instructions
  1. Heat oven to 375°
  2. Wash and dry potatoes, pierce with a fork and place directly on oven rack
  3. Bake 30 - 40 minutes until tender when pierced with a knife. Set aside to cool
  4. In sauté pan, add 2 tablespoons olive oil, ground beef, oregano, salt, onion powder, garlic powder. Cook meat all the way through
  5. Cut avocados in half and remove seed. Scoop meat into a bowl
  6. Mash with coconut cream, and cilantro. Add a teaspoon of salt and the lime juice
  7. Sauté the sliced onion in 3 tablespoons olive oil until golden brown and caramelized
  8. To assemble tacos; slit each potato at the way across the top, scoop out half the potato (save for mashed potato's)
  9. Fill with the ground beef mixture
  10. Top with guacamole and sprinkle with scallions
  11. Add a spoonfull of coconut cream to the top if you like
