This is the sweet-potato variety of the tried and true diner favorite “hashbrowns.” Don’t worry, you won’t sacrifice any of the addictive crispiness of the conventional version! We recommend topping it with a bit of our “Best Paleo Ketchup!”

- 1lb sweet potatoes
- ¼ cup onion minced
- POTG Pure Pasture Raised Duck Fat
- 1 egg
- Salt, pepper
- Peel and grate sweet potato on box grater. Press all moisture out of potatoes and onions with towel, season with salt and pepper, mix in egg as binder, and mixture should be clinging together but not wet. Melt a few tablespoons of duck fat in a heavy skillet over medium heat and spread out potato mixture. Saute until golden brown and then slip a spatula underneath and flip hashbrowns to cook other side.
