This recipe might feel like a carb overload, but because it’s made with cauliflower and a soy-free sauce, it’s totally healthy for you. Cauliflower fried rice can be whipped up in a hurry, and you can feel free to add whatever veggies you have on hand.

Instructions
- Remove leaves and core from cauliflower and process florets in processor, pulsing until they are rice-grained sized. Small dice the onion, and peel and chop the carrot finely. Finely chop the scallions, mince the garlic and peel and mince the ginger.
- In a large saute pan, heat the olive oil, add the onions and carrots, saute for 2-3 minutes, then add ginger, garlic and scallions and sweat for 2-3 minutes. Then, add ginger, garlic, and scallions and sweat for another 2-3 minutes, then add cauliflower, stir well to combine, then add coconut aminos and stir allowing steam to finish cooking the cauliflower. Don’t overcook.
- Season lightly with sea salt if desired.
You can add cooked pork, shrimp, scrambled egg, chicken or beef to the fried rice to make it a more substantial meal.
