This recipe might feel like a carb overload, but because it’s made with cauliflower and a soy-free sauce, it’s totally healthy for you. Cauliflower fried rice can be whipped up in a hurry, and you can feel free to add whatever veggies you have on hand.

Instructions 

 

  1. Remove leaves and core from cauliflower and process florets in processor, pulsing until they are rice-grained sized. Small dice the onion, and peel and chop the carrot finely. Finely chop the scallions, mince the garlic and peel and mince the ginger. 
  2. In a large saute pan, heat the olive oil, add the onions and carrots, saute for 2-3 minutes, then add ginger, garlic and scallions and sweat for 2-3 minutes. Then, add ginger, garlic, and scallions and sweat for another 2-3 minutes, then add cauliflower, stir well to combine, then add coconut aminos and stir allowing steam to finish cooking the cauliflower. Don’t overcook.
  3. Season lightly with sea salt if desired.

You can add cooked pork, shrimp, scrambled egg, chicken or beef to the fried rice to make it a more substantial meal.
