Paleo on the Go knows that many followers of the paleo diet miss certain foods after adapting a paleo lifestyle.  However, we’re here to make sure you don’t feel like you’re missing out on anything.  That’s why our kitchen crew has developed a paleo pizza!   We’ve taken pizza and made it using REAL FOOD.  Serve this up at your next party or when the kids ask for pizza night.  It will definitely be a big hit!

Directions (Cashew Cheese):

1.  In a food processor, process soaked nuts with a pinch of salt and garlic until smooth like ricotta.
 
 

Directions (Pizza):

1.  Dip eggplant in the egg, then dredge in almond flour.
 
 
2.  Place on baking sheet and spray with olive oil.
3.  Then bake at 375 degrees until golden.
 
 
4.  Top each eggplant round with 2 tbsp. if marinara and sprinkle on basil.
 
 
5.  Sprinkle cashew cheese on each eggplant round.
 
 
6.  Return to oven for five minutes to heat the toppings.
