The experts say that we should all be consuming more organ meats. We are told our ancestors ate organ meats and that they were often saved to be served on special occasions. In some cultures pregnant women were served organ meats, in others they were saved for the hunters and warriors. Why is that you ask? Because they are loaded with vitamins and nutrients, much more than the muscle meat we are used to consuming. Think about it; in the wild when one animal attacks and eats another they often go straight for the gut to gain access to the organs. Makes sense right?

Chef Ann developed this kidney stew adding other strong flavors to help mask what for some can be the over powering taste of the kidney. Onions and mushrooms help with that as does the bacon, because you know everything is better with bacon. A 3.5 oz portion of kidney has approximately 135 calories, 4 grams of fat and 20 grams of protein.
