Homemade Paleo Mayonnaise

Plus, when it’s made with quality eggs and non-inflammatory oil, it’s a nutrient powerhouse. There are so many ways to use mayo. I think we get stuck using it in just the same ways, spread some on a slice of bread and add some sliced meats. But it is also great for cooking chicken, making delicious sauces and so much more.

- 1 cup avocado oil (or olive oil if you don't mind the taste)
- 1/2 tsp sea salt
- 4 tsp lemon juice
- 1 tsp dijon mustard
