Want to make our pork green chili at home? Ours is a little different because we add in sweet potatoes. It’s one of my favorites!

Pork Green Chili
Tender pork infused with the flavors of garlic, lime, cumin and tomatillos.

  1. 2 lbs pork shoulder, cut into small chunks
  2. 1 Tbs coconut oil
  3. 2 cups beef broth
  4. 2 lbs tomatillos, rinsed, quartered
  5. 1 onion, diced
  6. 1 large tomato, diced
  7. 4 garlic cloves, crushed
  8. 1 tsp sea salt
  9. 1 tsp cumin
  10. 1/2 tsp black pepper
  11. 1 sweet potato, peeled and cubed
  1. Sear pork in coconut oil in a large dutch oven.
  2. Remove.
  3. Saute onion. Add more coconut oil if necessary.
  4. Add beef broth, pork, tomatillos, garlic, sea salt, cumin, pepper, and sweet potato.
  5. Cover and place in oven at 350.
  6. Cook until pork is fork tender. Approximately 2-3 hours.
  7. Taste for seasonings. Add more salt if necessary.
  8. Add chopped tomatoes and stir in.
  9. Top with fresh cilantro and serve.
