Paleo Chicken Tenders are Perfect for the Kiddos

Paleo Sweet and Sour Sauce

Pork Dusted Chicken Fingers w/ Sweet & Sour Sauce

  1. 1 lb chicken breast cut into thin strips
  2. 1 package of Bacon’s Heir Pork Dust
  3. 1 cup Otto’s Cassava flour, seasoned with 1 tsp. salt, 1 tsp. pepper
  4. 2 whole cage free eggs
  5. ½ cup OMGhee
  6. For the sweet & sour sauce
  7. 1 cup pineapple juice
  8. 3 T. white vinegar
  9. ¼ cup water
  10. 1 T. coconut aminos
  11. ½ cup honey
  12. 2 T. arrowroot powder, diluted in 2 T. water
For the chicken
  1. Set up a breading station with one plate of cassava flour, seasoned with salt and pepper; one bowl of whisked eggs with a little water added to thin it, one plate of pork dust which will be your “bread crumbs.”
  2. Dredge each chicken strip into the flour, then the egg, then the pork dust shaking off excess and laying out strips on a clean platter. When all breaded, cover and refrigerate for a few minutes while you get your sauce ready.
  3. Once sauce is ready, get your chicken fingers out of the refrigerator. Melt ghee in a shallow skillet until hot, fry chicken fingers turning carefully once until golden and crisp on both sides. Remove to paper towel lined tray to blot up extra fat.
  4. For the sweet & sour sauce
  5. Mix all ingredients together in saucepan and simmer until thickened. Set aside.
  6. Serve chicken fingers with sweet and sour dipping sauce on the side.
