There are many ways to enjoy salmon. Personally I don’t care for it but I know many people who love it. This recipe for Salmon with Coconut Cream Sauce is very tasty (I did try it) so I am sure if you are a someone who likes salmon, you will love this dish!

  1. wild salmon fillets - 1 pound
  2. sea salt - 1/4 tsp
  3. freshly ground black pepper - 1/4 tsp
  4. coconut oil - 2 tsp
  5. fresh garlic - 3 cloves, minced
  6. large shallot - 1, minced
  7. lemon - 1, juice and zest
  8. unsweetened full-fat coconut milk - 1/2 cup
  9. fresh basil - 2 Tbsp, chopped
  1. Preheat oven to 375°F.
  2. Place salmon in a shallow baking dish and season with salt and pepper.
  3. Heat coconut oil in a medium saute pan or cast iron skillet over medium heat. Add garlic and shallots and saute until tender and fragrant, 3-5 minutes. NOTE: Keep the heat at medium so the garlic doesn't burn. Add lemon zest, lemon juice, and coconut milk, stirring to combine.
  4. Bring to a low boil, then remove from heat and stir in basil.
  5. Pour mixture over salmon. Bake, uncovered, for 10-20 minutes or until salmon flakes easily with a fork.
